01 - In a bowl, combine shrimp, olive oil, minced garlic, dried oregano, salt, pepper, and lemon juice. Marinate for 10–15 minutes.
02 - Preheat a grill or grill pan over medium-high heat. Grill shrimp for 2–3 minutes per side until opaque and lightly charred. Remove from heat.

04 - In a small bowl, whisk together olive oil, lemon juice, oregano, honey, salt, and pepper to make the dressing.
05 - Drizzle half the dressing over the salad and toss gently to combine.
06 - Divide the salad among four bowls. Top each with grilled shrimp and drizzle with remaining dressing.
07 - Serve immediately, garnished with extra feta or fresh herbs if desired.

# Expert Advice:

01 -
  • Shrimp cooks in minutes, so you're eating dinner before the sun sets.
  • Every bite has a different texture—crispy, creamy, briny, and tender all at once.
  • It looks restaurant-quality but honestly feels less fussy than it appears.
02 -
  • Don't marinate the shrimp longer than twenty minutes or the lemon juice will start to cook them raw—you only get one chance to grill them.
  • If your feta is too salty (it happens), crumble it fresh into the bowl instead of adding it early, so it doesn't overshadow the other flavors.
03 -
  • Buy your shrimp the same day you plan to cook them; they taste noticeably better when they're truly fresh.
  • Toast the dried oregano briefly in a dry pan before using it to wake up its flavor and make the whole bowl taste less like recipe and more like kitchen magic.
